Tomato Soup with Cheesy Toastie

Ingredients

Soup:

  • 2 packs cherry tomatoes (halved)
  • 3 sprigs fresh thyme (removed from stalk)
  • 1/2 onion (roughly chopped)
  • 2 cloves garlic (whole)
  • 1 fresh chilli (optional; whole)
  • 1/4 can coconut milk

Toastie:

  • 4 slices of bread of choice
  • handful grated cheddar
  • sprinkle of feta
  • knob of butter

Method

Soup:

  • 1Preheat oven to 200 degrees.
  • 2Place the tomatoes, onions, whole garlic, whole chilli and thyme on a baking tray, drizzle with olive oil and season with salt & pepper and bake for 15 minutes.
  • 3Remove from oven and transfer to a cooking pot.
  • 4On low heat, simmer the mixture and add your coconut milk, stirring thoroughly for about 5 minutes.
  • 5Transfer to a blender and blend the mixture thoroughly.
  • 6Return the mixture to the pot, season to taste and simmer until ready to serve!

Toastie:

  • 1Heat half of your butter in a non-stick pan on medium-high heat and use the other half to butter the inside of the bread.
  • 2Add grated cheese and feta to two slices and top with the remaining two slices.
  • 3Toast each side of the toastie in the pan for about 4 minutes a side.
