Description

A spicy, tasty and crowd-pleasing Thai green chicken curry!

I would highly recommend letting your curry cool down slightly before serving! You can serve it with rice, poppadoms, naan, sambals or a combination of everything :)

Thai Green Chicken Curry

Ingredients

  • 400g chicken breast (chopped into small pieces)
  • 1 teaspoon coriander leaves
  • 1 teaspoon chilli flakes (optional)
  • 1 tablespoon butter
  • 1 white onion (finely chopped)
  • 1 teaspoon chopped garlic
  • 1 teaspoon chopped ginger
  • 1 red pepper (finely chopped)
  • 1 yellow pepper (finely chopped)
  • 1 sachet Thai green curry paste
  • 1 can coconut milk

Method

  • 1Fry your chicken with coriander leaves, chilli flakes, salt & pepper until browned; set aside for later.
  • 2Melt your butter in a large pot on medium-high heat.
  • 3Add your onion, garlic and ginger and fry until the onion is cooked.
  • 4Add your peppers, a pinch of salt and fry for a further five minutes, stirring occasionally.
  • 5Add your sachet of curry paste and stir thoroughly.
  • 6Add a splash of water and scrape the bottom of the pot to prevent burning, and to form a thick paste.
  • 7Add your coconut milk and chicken, and allow to simmer for 15 minutes.
  • 8Allow to cool before serving and viola!
